Why Do Brew Ratios Matter?

Coffee beans contain roughly 28% water-soluble material. The Specialty Coffee Association golden extraction window targets dissolving 18% to 22% of the bean's total mass.

Using too little water (e.g. 1:12) under-extracts the grounds, leaving behind heavy sour acids without dissolving sweet carbohydrates. Using too much water (e.g. 1:20) over-extracts, leaching bitter, astringent lignin and polyphenols into your cup.
